reasons why today should be deleted.

1. dan got called into the bishopric. whaaaaaat??
2. dan doesn't sit with us in sacrament meeting anymore.
3. henry knew this, and threw up all over the floor after dan left.
4. henry kept throwing up all day, mostly while dan was still at church of course. and strategically on the white rug. after drinking red gatorade.
5. i ran about 6 loads of throw-up laundry.
6. when things finally looked to be settled down and henry was eating saltines like he'd never eaten anything before (which is saying a lot for henry), george decided the best way to top off today would be by sticking one of his new tiny legos up his nose. he is at the ER with daddy as we speak.

Colby Ham Sandwiches

I have been bad about posting my recipes lately!! i swear I still cook for my family :)

This is the one I tried tonight, and we all loved it!!





  • 15 Servings
  • Prep/Total Time: 25 min.

Ingredients

  • 1/2 cup butter, melted
  • 2 tablespoons prepared mustard
  • 1 tablespoon dried minced onion
  • 1 tablespoon poppy seeds
  • 2 to 3 teaspoons sugar
  • 15 dinner rolls (about 3-inch diameter), sliced
  • 15 slices Colby cheese
  • 15 thin slices deli ham (about 1 pound)
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese

Directions

  • In a small bowl, combine the butter, mustard, onion, poppy seeds and sugar. Place roll bottoms, cut side up, in an ungreased 15-in. x 10-in. x 1-in. baking pan. Top each with Colby cheese, ham and mozzarella. Drizzle with half of the butter mixture.
  • Replace roll tops. Drizzle with remaining butter mixture. Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted. Yield: 15 servings.


I halfed it for our family and they were all gone at the end (henry ate one all by himself!). I served them with sweet potato fries. YUM!

Mexican Wedding cookies

These are some of my favorite cookies from way back when. I know my mom made them a few times when I was little, and I just thought they were delicious. I found this recipe online, modified it a little, and it's delicious, too!


Mexican Wedding Cookies

Ingredients

  • 1 cup butter
  • 1/2 cup white sugar (superfine sugar works best, you can make it in your blender if you can't find it at the store. just blend regular sugar until it's finer.)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 teaspoons water
  • 2 cups all-purpose flour
  • 1 cup chopped almonds (or pecans, or walnuts, doesn't matter)
  • 1/2 cup confectioners' sugar

Directions

  1. In a medium bowl, cream the butter and sugar. Stir in vanilla and water. Add the flour and almonds, mix until blended. Cover and chill for 3 hours.
  2. Preheat oven to 325 degrees.
  3. Shape dough into balls. Place on an unprepared cookie sheet and bake for 15 to 20 minutes in the preheated oven. Remove from pan to cool on wire racks. When cookies are cool, roll in confectioners' sugar. Store at room temperature in an airtight container.

Thoughts...


so, i don't know how people can wait to find out what sex their baby is. i mean obviously if there was no such thing as an ultrasound i can understand, but i absolutely cannot understand how you have the technology to know and just don't. makes no sense to me. here i am about 14 weeks along and i am seriously about to die of anticipation. i asked my dr. last time if i could find out at 16 weeks because i know a lot of people who have and she said, "no, we do that at 20 weeks." ugh. the weeks cannot pass fast enough!!!

but it's a win win situation. i'm happy with whoever comes. i just want to know. right now!

well, it's all silly anyways. i know it's a boy.... i think.
